Recipe: Easy + Yummy Shrimp Tacos!

Hello, and happy Friday, everyone!
Since we are {almost} to the weekend, I'm sure you guys are all tired... and possibly looking for an easy but delicious recipe to make for dinner? {yeah, that's what I thought!} Justin and I both love Asian foods, as you may already know. But we also eat a lot of Mexican food. We have taco's or something taco-esque probably once a week or so. This easy Shrimp Taco Recipe is one I found on Real Simple. It combines yummy seafood and the taco concept together, so it's a win-win in the Porter household :) I thought I'd share it because it's SO GOOD! We've made it a couple times here, and I'd make it again in a heartbeat. Oh, and it's super easy. The best. I've made just a couple little changes, so I'll post my version of the recipe here. Sorry for the lack of pictures, but you get the point.

ingredients:
1/4 cup orange juice (we just use the bottled kind)
2 tablespoons lime juice
2 tablespoons sour cream
1/3-1/2 cabbage, shredded
1 cup corn (canned or frozen- I'd do a little more than 1 cup even.)
1 jalapeno, seeded
1 tablespoon olive oil
A little bit of salt and pepper
2 pounds shrimp (make sure to take the tails off!)
package of tortillas (we like the uncooked kind that you warm up yourself:)

Our "special" ingredients:
Mayo
Chalula Sauce

step 1:
In a large bowl, mix together the orange juice, lime juice, sour cream, and a couple dashes of salt and pepper. Don't mind my ghetto whisk technique (aka whisk from my mixer).. We've been married almost 10 months, and haven't invested in a real whisk. lol.
step 2:
Add the cabbage, corn, and jalapeno. Keep mixing it around so the slaw-juice soaks into the cabbage a little bit.

While the cabbage sits for a bit, heat the oil in a skillet. Cook the shrimp until opaque. Add some salt and pepper for flavor.
step 3:
You are DONE! Cook your tortillas (if you get the uncooked kind!). Justin and I LOVE adding a little bit of Mayo and Chalula Sauce on the tortilla before topping it off with the slaw + shrimp. It's SO GOOD!

The changes I made were slight, but here they are in case you were wondering:
The recipe calls for a lot of liquid for the slaw, and 1/4 of a small cabbage is not enough for all of it! So that's why I said 1/3-1/2 of a normal cabbage. It is just proportionally better.
I also said 2 pounds of shrimp instead of 1, because... If you like shrimp, 1 pound is NOT enough! ;)
And, of course, mayo and chalula sauce, haha!

And k Rachel you have left me with the BIGGEST craving for tacos now. ha I didn't even think I liked shrimp tacos but now I am definitely considering running to the store for some tortillas. And I totally agree on the uncooked kind- soo much better than the other ones.

This looks really simple and delicious! I LOVE shrimp but don't usually buy it since it's so expensive. And I never would have thought of mayo...Chalula though is a must!
